****CWA to sponsor wild game cooking demonstrations and recipe contest at 2007 ISE shows****

Two of the nation’s foremost authorities on wild game cooking, Scott Leysath and John McGannon, will share the secrets of their favorite fish and game dishes at the Sacramento and San Mateo International Sportsman’s Expositions (ISE). This year, you have a chance to join them. Enter to win our “One-Pan Wonder” wild game recipe contest and you can receive great prizes and free show tickets – you might even get to cook your first place recipe with one of our celebrity chefs. Winning “One-Pan Wonder” recipes will be published in California Waterfowl magazine. One winner each will be selected for the Sacramento ISE (January 18-21) and the San Mateo ISE (January 11-14). Come out to the ISE in your area, visit the CWA booth, and be sure to catch one of the wild game cooking seminars.

Scott Leysath, The Sporting Chef, is one of America’s leading authorities on fish and game preparation. He spent four years on HGTV’s “Home-Grown Cooking” before launching his own weekly television shows, “The Sporting Chef” and “HuntFishCook.” A CWA Life Member, Leysath writes for a number of sporting publications, including California Waterfowl. “One-Pan Wonder” Recipe Contest

What is a “One-Pan Wonder”? A game or fish dish that can be cooked in a single pan. Sauce and food prep can be done ahead of time, but you must be able to cook the dish in a pan very quickly.

Be sure to include:

1. The number of servings per recipe. If it it’ll fit in a pan, chances are good it won’t serve more than four.

2. Ingredient quantities: If someone is going to recreate your masterpiece, they’ll need to know how much of each ingredient goes in.

3. Details, details: Should the dish be covered or uncovered? The pan greased or not? What type of oil? Skin on or off? Remember, you know how to cook it, we don’t.

4. What’s it called? Adam and Eve on a Raft, Sweet and Sour Duck, Spooney Fricassee?

Please be clear and concise with the directions. Take a look at other recipes and use them as guidelines. If we can’t understand it, we can’t use it.
